Natural peach purée finds its application in a wide range of finished products, including smoothies, mixed juices, nectars, baby food, jams, fruit preparations, fillings for pastries, yogurt, and ice cream.
Typically, fully ripe peaches are not juiced directly but instead processed into a purée. The peaches are carefully washed, selected, and destoned before being passed through a pulper machine to transform them into a liquid form. Heating the peaches prior to pulping can facilitate the process, reduce oxidation, and stabilize the purée’s clarity.
To ensure optimal efficiency, the pulping process is carried out in two stages. During this process, air can become incorporated into the purée, potentially compromising its color and flavor. Therefore, it is essential to pass the purée through a deaerator to preserve the fresh fruit’s characteristics.
